Fulins Asian Cuisine in Brentwood scored a 51 on a routine health inspection Sept. 16.

The restaurant at 782 Old Hickory Blvd. was cited for unsafe food temperatures, mouse droppings, improper food storage and unsanitary conditions, according to the Tennessee Department of Health inspection report. Inspectors found "no active managerial control is present in establishment" due to multiple priority violations.

Most other Brentwood-area restaurants scored 94 or above on their latest September inspections, as we reported Oct. 8. No statement from Fulins management was available in public records as of publication.

Cooked rice inside a prep cooler measured 55 degrees Fahrenheit, well below safe holding temperatures. Raw salmon, cooked shrimp and crab sticks in the sushi display cooler measured between 45 and 47 degrees. Inspectors discarded all seafood and other perishable foods from the cooler. Vegetable and pork egg rolls under a heat lamp measured 125 degrees and were also discarded.

Mouse droppings were found around a dry goods container. Raw chicken and beef were stored above vegetables. An employee was observed drying dishes with a towel instead of allowing them to air-dry. Mop water was being poured into the three-compartment sink used for dishwashing.

The state inspection report also documented a major freshwater leak from the hot water heater, major dust buildup on ceiling vents throughout the kitchen and an extremely dirty floor under the cook line. The Tennessean reported grime on a can opener and walk-in cooler shelves, along with significant grease buildup on hood filters above the cook line.

Fulins improved to an 84 on a follow-up inspection Sept. 24. Inspectors recommended all employees attend a free Food Handlers class offered by the health department.
